Squid with Tomatoes and Peas

Ingredients

  • Approx 500g squid, cleaned, sac cut into 1cm rings, tentacles divided into two parts
  • 200g ripe tomatoes
  • Large handful frozen peas
  • 1.5 tbs finely diced onion
  • 1 tbs chopped garlic
  • 1 tbs chopped parsley
  • Salt and pepper to taste
  • Good quality EVOO

Preparation

  1. Blanch tomatoes for 1 min. Peel skin then coarsely chop keeping all juices.

  2. In a saucepan add about 4 tbs EVOO and sweat onions and garlic for 1-2 min before adding parsley then tomatoes and their juices. Cover the pan and simmer for 10 minutes.

  3. Add squid, salt and pepper, then cover and simmer for 40 mins.

  4. Add thawed peas after 40 mins then simmer for 3-4 mins.

  5. Test squid to make sure it’s super tender, adjust for salt.
