Preparation
Prepare the lemon vinaigrette by mixing lemon juice, olive oil, dijon mustard, salt, pepper, and oregano.
Assemble the salad by combining mixed greens, carrots, cucumber, beets, and avocado, then dress with the vinaigrette.
Pan-sear the baby potatoes until golden brown.

Sear the steak in a cast iron pan with avocado oil.
