Cauliflower Gnocchi with Sausage, Peas, and Roasted Mushrooms

Ingredients

  • Shiitake mushrooms
  • Scallions
  • 1 clove garlic
  • Olive oil
  • Sausage
  • Cauliflower gnocchi
  • Frozen peas
  • 1 tablespoon butter

Preparation

  1. Preheat oven to 400°F

  2. Mix shiitake mushrooms, scallions, garlic, and olive oil together.

  3. Bake the mixture along with sausage in the oven for 12 minutes.

  4. In a skillet, sauté cauliflower gnocchi and frozen peas in 1 tablespoon of butter until cooked through.

  5. Mix all components together and serve.
