Slow Roast Lamb for Sunday Dinner

Ingredients

  • 1 leg of lamb
  • 1 tbsp olive oil
  • 15 cloves garlic
  • 1 large onion
  • 10 sprigs thyme
  • 1 tsp salt
  • 1 tbsp butter
  • 1 tbsp flour

Preparation

  1. Preheat the oven to 170C

  2. Heat the olive oil in a large pan and sear the lamb till browned on all sides.

  3. Put the garlic, onion and thyme in a large roasting dish. Put the seared lamb on top and sprinkle with salt.

  4. Cover tightly with foil

  5. Roast for four and a half hours till tender and falling apart

  6. Take the lamb, onions and garlic out of the roasting dish. Set aside and cover with foil to keep warm while you make the gravy.

  7. Put a sieve over a measuring jug and pour the juices out of the roasting pan into it. Spoon off the fat that forms on the top. The rest is what will become the delicious gravy.

  8. Melt the butter in a medium sized sauce pan. Add the flour and cook together for about two minutes. Mix well.

  9. Gradually add the meat juices whisking together till the gravy is thick and glossy. Taste, season as needed and add a little warm water if it’s too thick.

  1. This recipe is perfect for an easy family dinner as you can prepare it and forget about it for four hours.

  2. It can be served with braised cauliflower, roast vegetables, and bulgur wheat for a complete meal.
