Green Goddess Cobb Salad

Ingredients

  • mixed greens
  • cherry tomatoes
  • pickled onions
  • chicken
  • hard boiled eggs
  • bacon (optional)
  • avocado

Dressing

  • 1 avocado
  • 1/2 cup water
  • 1/4 cup olive oil
  • juice of 1/2 lemon or 1 small lemon
  • 2-3 cloves garlic
  • 3 tablespoons fresh parsley
  • 3 tablespoons chives or green onions
  • salt and pepper to taste

Preparation

  1. Blend together the dressing ingredients: 1 avocado, 1/2 cup water, 1/4 cup olive oil, juice of 1/2 lemon, 2-3 cloves garlic, 3 tablespoons fresh parsley, 3 tablespoons chives or green onions, and salt and pepper to taste.

  2. If not already prepped, prepare hard boiled eggs and chicken.

  3. Combine the salad ingredients: mixed greens, cherry tomatoes, pickled onions, chicken, hard boiled eggs, bacon (optional), and avocado in a bowl.

  4. Add the dressing to the salad and toss to combine.

  5. This recipe makes 4-6 servings.
