Green Goddess Cobb Salad
Ingredients
- mixed greens
- cherry tomatoes
- pickled onions
- chicken
- hard boiled eggs
- bacon (optional)
- avocado
Dressing
- 1 avocado
- 1/2 cup water
- 1/4 cup olive oil
- juice of 1/2 lemon or 1 small lemon
- 2-3 cloves garlic
- 3 tablespoons fresh parsley
- 3 tablespoons chives or green onions
- salt and pepper to taste
Preparation
Blend together the dressing ingredients: 1 avocado, 1/2 cup water, 1/4 cup olive oil, juice of 1/2 lemon, 2-3 cloves garlic, 3 tablespoons fresh parsley, 3 tablespoons chives or green onions, and salt and pepper to taste.
If not already prepped, prepare hard boiled eggs and chicken.
Combine the salad ingredients: mixed greens, cherry tomatoes, pickled onions, chicken, hard boiled eggs, bacon (optional), and avocado in a bowl.
Add the dressing to the salad and toss to combine.
This recipe makes 4-6 servings.
