Mediterranean Chickpea Tuna Salad with Lemon Garlic Dressing
Ingredients
- 12 oz Portofino tuna albacore or yellowfin
- 2 (15.5 oz) cans drained and rinsed chickpeas
- 1 small diced red onion
- 1 cup black pitted kalamata olives
- 8 oz drained and chopped roasted red peppers
- 4 oz feta cheese
- 1/2 cup chopped parsley
Dressing
- juice of 1 lemon
- 1/3 cup olive oil
- 3 cloves minced garlic
- 1 tsp salt
- 1/2 tsp pepper
Preparation
Mix together the tuna, chickpeas, red onion, kalamata olives, roasted red peppers, feta cheese, and parsley.
In a small bowl, whisk together the juice of 1 lemon, olive oil, minced garlic, salt, and pepper.
Add the dressing to the tuna mixture and stir until combined.
Enjoy immediately or store in the fridge for up to five days.
