Mediterranean Chickpea Tuna Salad with Lemon Garlic Dressing

Ingredients

  • 12 oz Portofino tuna albacore or yellowfin
  • 2 (15.5 oz) cans drained and rinsed chickpeas
  • 1 small diced red onion
  • 1 cup black pitted kalamata olives
  • 8 oz drained and chopped roasted red peppers
  • 4 oz feta cheese
  • 1/2 cup chopped parsley

Dressing

  • juice of 1 lemon
  • 1/3 cup olive oil
  • 3 cloves minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation

  1. Mix together the tuna, chickpeas, red onion, kalamata olives, roasted red peppers, feta cheese, and parsley.

  2. In a small bowl, whisk together the juice of 1 lemon, olive oil, minced garlic, salt, and pepper.

  3. Add the dressing to the tuna mixture and stir until combined.

  4. Enjoy immediately or store in the fridge for up to five days.
