Garlic Lemon Chickpea Avocado Burger
Ingredients
Mash mixture
- 1/2 Cup Chickpeas
- 1/2 Avocado
- 1/2 Tbsp Lemon (juiced)
- 1/4 Cup Parsley (chopped)
- 1 Garlic Clove (minced)
- Salt & Pepper to taste
Roasted vegetables
- 1 cup mixed vegetables (e.g., eggplant, zucchini, capsicum, purple onion)
- 2 Tbsp balsamic vinegar
- 1 Tbsp mixed herbs
- Salt and pepper to taste
Preparation
In a large bowl, add the chickpeas and avocado. Mash well until everything is smooth. Add the lemon juice, parsley, garlic, sea salt and pepper. Mix well once more.
In a bowl combine the vegetables with about 2 Tbsp of balsamic vinegar, 1 Tbsp of mixed herbs, and some salt and pepper. Roast in the oven for about 30 minutes or until cooked.
Serve the mash on a healthy wholegrain bun or sandwich with some fresh greens, sprouts and homemade oil-free hummus.
