Garlic Lemon Chickpea Avocado Burger

Ingredients

Mash mixture

  • 1/2 Cup Chickpeas
  • 1/2 Avocado
  • 1/2 Tbsp Lemon (juiced)
  • 1/4 Cup Parsley (chopped)
  • 1 Garlic Clove (minced)
  • Salt & Pepper to taste

Roasted vegetables

  • 1 cup mixed vegetables (e.g., eggplant, zucchini, capsicum, purple onion)
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp mixed herbs
  • Salt and pepper to taste

Preparation

  1. In a large bowl, add the chickpeas and avocado. Mash well until everything is smooth. Add the lemon juice, parsley, garlic, sea salt and pepper. Mix well once more.

  2. In a bowl combine the vegetables with about 2 Tbsp of balsamic vinegar, 1 Tbsp of mixed herbs, and some salt and pepper. Roast in the oven for about 30 minutes or until cooked.

  3. Serve the mash on a healthy wholegrain bun or sandwich with some fresh greens, sprouts and homemade oil-free hummus.
