20-Minute Mediterranean Farro Salad
Ingredients
- 1 cup dry farro
- 1 can chickpeas, drained and rinsed
- 1 large cucumber
- 1/2 red onion
- 1 red pepper
- ~1/2 cup feta cheese
- ~1/2 cup kalamata olives
- fresh parsley to taste
Lemon vinaigrette
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- juice of 1 small lemon
- 1 teaspoon dijon mustard
- salt to taste
- pepper to taste
- garlic to taste
- oregano to taste
Preparation
Cook 1 cup of dry farro according to package instructions.
Prepare the lemon vinaigrette by whisking together 1/4 cup olive oil, 2 tablespoons red wine vinegar, juice of 1 small lemon, 1 teaspoon dijon mustard, salt, pepper, garlic, and oregano to taste.
In a large bowl, combine the cooked farro, drained and rinsed chickpeas, chopped cucumber, sliced red onion, diced red pepper, crumbled feta cheese, kalamata olives, and fresh parsley to taste.
Drizzle the vinaigrette over the salad mixture and toss to combine.
Serve immediately.
