Lentil and Spinach Salad
Ingredients
- 1 cup cooked brown lentils
- 1 tomato
- 1.5 cups cucumber
- 0.5 cup pitted olives
- 0.5 cup sliced red onion
- 0.5 cup crumbled feta cheese
- Spinach
Dressing
- 0.5 teaspoon salt
- 0.5 teaspoon ground pepper
- 1 tablespoon mustard
- 3 tablespoons vinegar
- 0.5 teaspoon minced garlic
- 3 tablespoons olive oil
Preparation
Prepare the dressing by whisking together mustard, vinegar, minced garlic, olive oil, salt, and pepper.
In a large bowl, combine the cooked lentils, chopped tomato, cucumber, pitted olives, sliced red onion, crumbled feta cheese, and fresh spinach.
Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
Serve immediately or refrigerate for later use.
