Fresh and Easy Bulgar Salad
Ingredients
- 1 cup fine bulgar
- 1.5 cups boiling water
- 1/3 bell pepper finely diced
- 1/4 cucumber diced
- some diced red onion (optional, add to taste)
- plenty of chopped coriander (parsley also works)
- salt as needed
Dressing
- 1/2 a lemon, juiced
- 3 tbsp olive oil
- 1 tbsp honey (use more if you want it sweeter)
- 1 garlic clove grated
- 1/2 tsp ground black pepper
- salt to taste
Preparation
Place the bulgar in a heatproof bowl and pour over the boiling water. You can add some salt and 1 teaspoon of olive oil at this point. Let it sit covered for 10 to 15 minutes, then fork through with a fork to separate.
Mix all of the ingredients for the dressing in a lidded mason jar and shake well.
Combine the bulgar, chopped veggies, coriander, and dressing in a bowl. Season with salt to your taste and enjoy alongside your main meal.
Tips
You can add extras like olives, sweetcorn, diced carrots, grilled halloumi, chopped egg, crumbled feta, etc., for added protein.
