Easy Vegan Feta Salad
Ingredients
Tofu feta
- 150g firm tofu
- 100g olive oil
- 1 garlic clove, minced
- 1tbsp oregano, dried
- 1tbsp nutritional yeast
- 1tsp thyme, dried
- 1tsp parsley, dried
- 1tsp salt
Salad
- Cucumber
- Green pepper
- Red onion
- Yellow+Red cherry tomatoes
- Black olives
- Fresh oregano
- Tofu feta
- A drizzle of extra virgin olive oil + 1-2tsp tofu feta marinade
Preparation
Drain tofu and cut into cubes.
Place the tofu cubes in a lidded jar.
Stir together olive oil and spices.
Pour the oil mixture over the tofu and close the lid.
Make sure the tofu is well coated with the marinade by giving the jar a good shake.
Place in the fridge overnight.
Cut the vegetables and arrange on a large platter.
Drizzle with olive oil and spices and top with tofu feta.
