Mediterranean Barley Salad Bowl

Ingredients

  • 2 cups cooked pearled barley
  • 3 cups broccoli florets
  • 1 box butter beans
  • 1/2 cup thinly shaved red onion
  • 20 kalamata olives quartered
  • 1/4 cup vegan feta cheese
  • 1 green onion chopped
  • Bunch of parsley chopped

Dressing

  • 1/2 cup olive oil
  • Juice of 1 fresh squeezed lemon
  • 1 tbsp vegan pesto
  • 2 tbsp tahini
  • 1 tsp dried oregano
  • 1 tbsp sumac
  • Water to thin
  • Bunch chopped cilantro
  • Salt and pepper to taste

Preparation

  1. Blanch the broccoli florets in boiling salted water for 1-2 minutes.

  2. Whisk together the dressing ingredients until well blended.

  3. Add all salad ingredients to a bowl and toss with the dressing.

Notes

  1. This salad can be eaten hot or cold.

  2. It is loaded with fiber, potassium, iron, and provides a good source of protein.
