Mediterranean Barley Salad Bowl
Ingredients
- 2 cups cooked pearled barley
- 3 cups broccoli florets
- 1 box butter beans
- 1/2 cup thinly shaved red onion
- 20 kalamata olives quartered
- 1/4 cup vegan feta cheese
- 1 green onion chopped
- Bunch of parsley chopped
Dressing
- 1/2 cup olive oil
- Juice of 1 fresh squeezed lemon
- 1 tbsp vegan pesto
- 2 tbsp tahini
- 1 tsp dried oregano
- 1 tbsp sumac
- Water to thin
- Bunch chopped cilantro
- Salt and pepper to taste
Preparation
Blanch the broccoli florets in boiling salted water for 1-2 minutes.
Whisk together the dressing ingredients until well blended.
Add all salad ingredients to a bowl and toss with the dressing.
Notes
This salad can be eaten hot or cold.
It is loaded with fiber, potassium, iron, and provides a good source of protein.
