Colourful Salad with Yoghurt Sauce

Ingredients

Colourful salad

  • 1 x 200g can sweetcorn, drained
  • 1 large bell pepper, diced
  • 1/2 red onion, diced
  • 5 radishes, sliced
  • 3 tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 rounded tsp honey
  • 1 garlic clove, finely chopped
  • salt and pepper to taste

Yoghurt sauce

  • 4 tbsp Greek yoghurt
  • 1/2 tsp garlic granules
  • 1/2 tsp smoked paprika
  • salt to taste

Preparation

Colourful salad

  1. Drain the sweetcorn and dice all the veggies, place in a bowl

  2. Put all the ingredients for the dressing into a lidded jar - olive oil, vinegar, garlic, honey, salt and pepper and shake well. Pour over the salad, mix to coat. Serve immediately

Yoghurt sauce

  1. Combine the Greek yoghurt with the other ingredients and mix well

Tips

  1. Use the yoghurt sauce as a spread in place of mayonnaise for burgers, wraps, sandwiches or as a dip for chips, wedges, roast vegetables

  2. For the salad dressing, use more apple cider vinegar if you like, and add more smoked paprika to the sauce if desired
