Buffalo Chicken Burgers with Spicy Corn

Ingredients

Buffalo chicken burgers

  • 1 lb chicken
  • 1/2 cup shredded carrot
  • 1/4 cup chopped spinach
  • 1/2 chopped onion
  • 2 tbsp feta
  • 1/4 cup hot sauce (used @sietefoods)
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • Sprinkle black pepper

Spicy baked corn

  • 3 ears of corn
  • 2 tbsp ghee (used @fourthandheart)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Sprinkle of salt & pepper
  • Sprinkle of chipotle or chili powder (about 1/4 tsp, add more for more spice)

Cashew cheese sauce

  • 1 cup soaked cashews (soak for at least 4 hours or overnight)
  • 1 cup water
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1/2 tsp chipotle powder

Preparation

Buffalo chicken burgers

  1. Sauté the onion and spinach for 3-4 minutes.

  2. In a bowl, combine all of the ingredients.

  3. Preheat oven to 400F.

  4. Line a pan with aluminum foil or grease.

  5. Form 6-7 burgers and place on pan.

  6. Bake for 20 minutes, flipping halfway through.

  7. Broil at the end for 2-3 minutes.

Spicy baked corn

  1. Melt the ghee then mix in the spices.

  2. Brush the corn with the mixture.

  3. Wrap in foil.

  4. Bake at 400F for 25-30 minutes.

Cashew cheese sauce

  1. Combine everything in a blender or food processor and purée.
