Buffalo Chicken Burgers with Spicy Corn
Ingredients
Buffalo chicken burgers
- 1 lb chicken
- 1/2 cup shredded carrot
- 1/4 cup chopped spinach
- 1/2 chopped onion
- 2 tbsp feta
- 1/4 cup hot sauce (used @sietefoods)
- 1 tsp garlic powder
- 1/2 tsp sea salt
- Sprinkle black pepper
Spicy baked corn
- 3 ears of corn
- 2 tbsp ghee (used @fourthandheart)
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Sprinkle of salt & pepper
- Sprinkle of chipotle or chili powder (about 1/4 tsp, add more for more spice)
Cashew cheese sauce
- 1 cup soaked cashews (soak for at least 4 hours or overnight)
- 1 cup water
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp sea salt
- 1/2 tsp chipotle powder
Preparation
Buffalo chicken burgers
Sauté the onion and spinach for 3-4 minutes.
In a bowl, combine all of the ingredients.
Preheat oven to 400F.
Line a pan with aluminum foil or grease.
Form 6-7 burgers and place on pan.
Bake for 20 minutes, flipping halfway through.
Broil at the end for 2-3 minutes.
Spicy baked corn
Melt the ghee then mix in the spices.
Brush the corn with the mixture.
Wrap in foil.
Bake at 400F for 25-30 minutes.
Cashew cheese sauce
Combine everything in a blender or food processor and purée.
