Buffalo Cauliflower Salad with Cashew Cheese
Ingredients
- 1 head cauliflower
- 2 tbsp olive oil
- 2 tbsp nutritional yeast
- 1/3 cup hot sauce
- 1/4 tsp chili powder
- 1/4 tsp paprika
- 1/2 tsp garlic
- sprinkle of salt
- avocado
- chopped onion
- roasted sweet potato
Cashew cheese sauce
- 1 cup soaked cashews
- 1 cup water
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp sea salt
- 1/2 tsp chipotle powder
Preparation
Cut cauliflower into bite-sized pieces and add 2 tbsp olive oil.
Bake cauliflower and sweet potatoes at 425°F for 25 minutes on the same pan.
Coat baked cauliflower with 2 tbsp nutritional yeast, 1/3 cup hot sauce, 1/4 tsp chili powder, 1/4 tsp paprika, 1/2 tsp garlic, and a sprinkle of salt.
Broil coated cauliflower for 2-3 minutes.
For cashew cheese sauce, soak 1 cup cashews for at least 4 hours or overnight.
Combine soaked cashews, 1 cup water, 2 tbsp nutritional yeast, 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp paprika, 1/2 tsp sea salt, and 1/2 tsp chipotle powder in a blender or food processor and purée.
Assemble the salad by adding buffalo cauliflower, cashew cheese sauce, avocado, chopped onion, and roasted sweet potato to a bowl.
