Vegan Mac N Cheese

Ingredients

  • 2 long carrots
  • 2 cups peeled potatoes
  • 1/2 cup cashews
  • 1/2 cup water
  • 1/4 cup nutritional yeast
  • 3 tbsp milk
  • 1 tbsp arrowroot powder
  • 1/2 lemon juiced
  • 1 tsp garlic
  • 1 tsp onion
  • 1 tsp paprika
  • a generous amount of salt & pepper
  • pasta shells of choice

Preparation

  1. Start off by peeling carrots and potatoes then boil them till soften

  2. Add the remaining ingredients into a high speed blender and blend till smooth

  3. Cook your pasta then add the cheese sauce into the noodles and on a low simmer stir around to coat

  4. I topped it off w an easy cashew parm and freshly cracked pepper!
