Vegan Mac N Cheese
Ingredients
- 2 long carrots
- 2 cups peeled potatoes
- 1/2 cup cashews
- 1/2 cup water
- 1/4 cup nutritional yeast
- 3 tbsp milk
- 1 tbsp arrowroot powder
- 1/2 lemon juiced
- 1 tsp garlic
- 1 tsp onion
- 1 tsp paprika
- a generous amount of salt & pepper
- pasta shells of choice
Preparation
Start off by peeling carrots and potatoes then boil them till soften
Add the remaining ingredients into a high speed blender and blend till smooth
Cook your pasta then add the cheese sauce into the noodles and on a low simmer stir around to coat
I topped it off w an easy cashew parm and freshly cracked pepper!
