Easter Banana Bread with Cinnamon and Chocolate
Ingredients
- 3 ripe bananas, mashed
- 200g oats, ground or whole rolled
- 100g butter or plant-based butter
- 3 eggs (or 3 chia eggs plus an extra banana for vegan option)
- 1.5 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 extra banana and/or 1 tablespoon oats for decoration (optional)
- 100g Easter egg chocolate
- Optional: nuts, seeds, berries, or dark chocolate for variation
Preparation
Whisk up the butter or coconut oil.
Add one egg, one-third of the mashed banana mixture, and one-third of the ground oats. Mix well.
Repeat with the second egg, another one-third of the mashed banana mixture, and another one-third of the oats.
Add the third egg, the remaining mashed banana mixture, and the remaining oats. Mix well.
Add the cinnamon and baking powder, and mix well.
Stir in the chocolate and pour the mixture into a baking tray.
Sprinkle with oats for decoration and top with sliced banana.
Bake in a preheated oven at 170°C for about 45 minutes or until a knife inserted comes out clean.
For a sweeter version, optionally add 50g of caster sugar or coconut sugar before baking.
