Easy No-Bake Chocolate Cream Cups Dessert

Ingredients

Crust

  • 1/2 cup medjool dates (100g)
  • 1/2 cup (60g) almonds (or any nut/seed)
  • 2 tbsp cacao/cocoa powder
  • 1/2 tsp salt
  • 1-2 tbsp water, as needed

Filling

  • 1 cups (120g) raw walnuts (cashews or macadamias would work too)
  • 1/4 cup (25g) cacao/cocoa powder
  • 1 cup (240g) full fat coconut milk (or nondairy yogurt)
  • 1/2 cup medjool dates (100g)
  • 1 tsp vanilla extract

Preparation

  1. Soak the walnuts for at least 30 minutes in hot water.

  2. Combine the crust ingredients in a food processor and process adding water slowly until it starts to clump together.

  3. Press into 12 mini muffins (or just use a loaf pan and cut into squares later).

  4. Drain the walnuts.

  5. Blend all the filling ingredients on high until very smooth and creamy (add more milk only if necessary).

  6. Pour filling on top of crust, and freeze overnight.

  7. Remove from the pan or cut into squares, and enjoy!
