Kanom Guay Chai Aka Thai Chive Cakes
Ingredients
- 1 cup rice flour
- 1/4 cup sticky rice flour
- 1/4 cup tapioca starch
- 1 tsp salt
- 200g chinese chives
- 1 cup water
Preparation
Cut chives into 1 inch lengths. Heat a wok or pan, add 1 tbs oil and pan fry chives for 1 min. Remove and set aside.
In a bowl mix flours with water, whisk until a smooth consistency is formed. Add chives and salt then mix thoroughly. Transfer liquid mix to a cake tin or tray or whatever you are using then steam the mixture for 30 minutes. Once 30 minutes is up, turn the heat off and allow mixture to cool until its OK to handle.
Remove the cake from the tin or tray. It should be firm and dense. Cut the cake into squares or triangles.
Heat a skillet and add some oil then proceeed to fry the cut cakes on each side for a few minutes until crispy. Serve with a dipping sauce of 4 parts dark soy sauce 1.5 parts white vinegar
