Kanom Guay Chai Aka Thai Chive Cakes

Ingredients

  • 1 cup rice flour⁣
  • 1/4 cup sticky rice flour⁣
  • 1/4 cup tapioca starch⁣
  • 1 tsp salt⁣
  • 200g chinese chives⁣
  • 1 cup water⁣

Preparation

  1. Cut chives into 1 inch lengths. Heat a wok or pan, add 1 tbs oil and pan fry chives for 1 min. Remove and set aside.⁣

  2. In a bowl mix flours with water, whisk until a smooth consistency is formed. Add chives and salt then mix thoroughly. Transfer liquid mix to a cake tin or tray or whatever you are using then steam the mixture for 30 minutes.⁣ Once 30 minutes is up, turn the heat off and allow mixture to cool until its OK to handle.⁣

  3. Remove the cake from the tin or tray. It should be firm and dense. Cut the cake into squares or triangles. ⁣

  4. Heat a skillet and add some oil then proceeed to fry the cut cakes on each side for a few minutes until crispy. Serve with a dipping sauce of 4 parts dark soy sauce 1.5 parts white vinegar
