No-Bake Matcha Date Brownies

Ingredients

  • 2 cups activated pecans
  • 1/2 cup raw cacao powder
  • 1/4 cup carob powder
  • 2 cups (approx 24) Medjool dates, pitted
  • 1/4 cup roasted almond butter
  • Pinch of good-quality salt

Frosting

  • 1/2 cup raw cashews, soaked 4 hours in water then drained
  • 1/4 cup coconut yoghurt
  • 1 tsp pure vanilla extract
  • 2 tsp matcha powder
  • 1/4 cup rice malt syrup
  • 1/4 cup coconut oil

Preparation

  1. Combine all brownie ingredients in a food processor and blend until well combined and sticky

  2. Press the brownie mixture firmly into a lined baking tin or dish to form an even layer

  3. For the frosting, blend all frosting ingredients in a high-speed blender until smooth and creamy

  4. Spread the frosting evenly over the brownie base

  5. Refrigerate the assembled brownies for at least 2 hours or until firm and set
