No-Bake Vegan Energy Bars with Dates and Nuts
Ingredients
- 180 g Medjool dates
- 100g pumpkin seeds
- 100g sunflower seeds
- 150 whole almonds
- 8 heaped tbsp cashew or peanut butter
- 75g rolled oats
- 1 tsp ground cinnamon
- 1-2 tbsp maple syrup or honey (optional)
- Silicone mould or use a baking sheet to line the bars
Preparation
Blend the pitted dates and peanut butter in a food processor to get a smooth paste.
Stir in the rest of the ingredients. They should form a big sticky ball. If it’s not holding together, add more nut butter.
Press the mix into your mould and refrigerate for 30 minutes.
Cut into bars and enjoy.
Optional: Bake in the oven at 180C for 10 minutes for a toasty flavor.
