No-Bake Vegan Energy Bars with Dates and Nuts

Ingredients

  • 180 g Medjool dates
  • 100g pumpkin seeds
  • 100g sunflower seeds
  • 150 whole almonds
  • 8 heaped tbsp cashew or peanut butter
  • 75g rolled oats
  • 1 tsp ground cinnamon
  • 1-2 tbsp maple syrup or honey (optional)
  • Silicone mould or use a baking sheet to line the bars

Preparation

  1. Blend the pitted dates and peanut butter in a food processor to get a smooth paste.

  2. Stir in the rest of the ingredients. They should form a big sticky ball. If it’s not holding together, add more nut butter.

  3. Press the mix into your mould and refrigerate for 30 minutes.

  4. Cut into bars and enjoy.

  5. Optional: Bake in the oven at 180C for 10 minutes for a toasty flavor.
