One Pot Creamy Taco Pasta
Ingredients
- 1 onion, diced
- 4 cloves garlic, minced
- 2 green chilis, minced
- 1 bell pepper, diced
- 1 tbsp taco seasoning
- 8 oz dry pasta
- 1 1/2 cups water, plus more as needed
- 1 1/2 cups tomato sauce or marinara
- 2 cups cooked corn
- 1 1/2 cups cooked black beans
- 3 tbsp tahini
Taco seasoning
- 1 tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp red chili flakes
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 1/2 tsp ground cumin
- 1 tsp salt
- 1 tsp black pepper
Preparation
In a skillet, heat some oil or water and add the onion, garlic, and chilis.
Sauté for 5 minutes, then mix in the bell pepper and taco seasoning.
Once fragrant, stir in pasta, water, and tomato sauce.
Cover the skillet and simmer on medium heat for 10 minutes, stirring occasionally to prevent sticking.
Add in corn and beans.
Continue to cook until the pasta is cooked through, about 5 more minutes.
Mix in the tahini.
Season with salt and pepper to taste, then serve warm.
