Vegan Creamy Garlic Spinach Pasta
Ingredients
- 1 potato (peeled)
- 1/3 cup onion (cut into large chunks)
- 1.5 cups water
- 2 tablespoons of the water from the veggies
- 1 cup full fat coconut milk
- 1 clove garlic
- 1 tablespoon tahini
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- cooked pasta
- some spinach
- tomatoes (optional)
- hemp seeds (optional)
Preparation
Boil 1 potato (peeled) and 1/3 cup onion (cut into large chunks) in 1.5 cups water and cook for about 15 minutes until soft.
Blend the veggies plus 2 tablespoons of the water from the veggies with 1 cup of full fat coconut milk (drain the coconut water from the can first), 1 clove garlic, 1 tablespoon tahini, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon paprika (or more).
Add the blended mixture to a pan and heat to medium, then toss with cooked pasta and some spinach.
Add tomatoes and hemp seeds if desired.
