Vegan Creamy Garlic Spinach Pasta

Ingredients

  • 1 potato (peeled)
  • 1/3 cup onion (cut into large chunks)
  • 1.5 cups water
  • 2 tablespoons of the water from the veggies
  • 1 cup full fat coconut milk
  • 1 clove garlic
  • 1 tablespoon tahini
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • cooked pasta
  • some spinach
  • tomatoes (optional)
  • hemp seeds (optional)

Preparation

  1. Boil 1 potato (peeled) and 1/3 cup onion (cut into large chunks) in 1.5 cups water and cook for about 15 minutes until soft.

  2. Blend the veggies plus 2 tablespoons of the water from the veggies with 1 cup of full fat coconut milk (drain the coconut water from the can first), 1 clove garlic, 1 tablespoon tahini, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon paprika (or more).

  3. Add the blended mixture to a pan and heat to medium, then toss with cooked pasta and some spinach.

  4. Add tomatoes and hemp seeds if desired.
