Homemade Penne with Arrabbiata Sauce
Ingredients
- olive oil
- 1 small onion
- 1 chili
- 3 cloves garlic
- 2 tablespoons tomato paste
- 800 grams chopped tomatoes
- 1 teaspoon sugar
- salt
- pepper
- chili powder
- 500 grams pasta
- 1/2 cup pasta water
- dried chili flakes
- oregano
Preparation
Heat olive oil in a pan over medium heat.
Add 1 small onion (finely cubed) and 1 chili (finely sliced), cook for about 1 minute until onion is translucent.
Add 3 cloves of garlic (minced), cook for half a minute while stirring constantly.
Add 2 tablespoons of tomato paste, 800 grams of chopped tomatoes, 1 teaspoon of sugar, salt, pepper, and chili powder.
Let the sauce cook for about 10 minutes on low heat.
In the meantime, cook 500 grams of pasta.
Add the cooked pasta to the sauce with 1/2 cup of pasta water.
Add more salt and pepper to taste.
Serve with dried chili flakes and a sprinkle of oregano, and note that fresh parsley can be used instead of oregano.
