Orange Cookies with Spelt and Coconut Flour
Ingredients
- 1 3/4 cup spelt flour
- 1/4 cup coconut flour (optional - you can also use garbanzo flour or teff flour)
- 1/2 cup grapeseed oil
- 1/2 cup coconut sugar
- 1 tbsp. agave syrup
- 1 tsp. orange zest
- 1/2 tsp. grated ginger
- 1/4 tsp. sea salt
Preparation
Sift the spelt flour and coconut flour in a bowl.
Put all the other ingredients in another bowl and mix.
Combine the flour and other ingredients, and stir to combine.
Knead the mixture into a ball of dough.
Note that the coconut flour makes the dough difficult to roll out; instead, take lumps of dough, form them into balls, flatten them onto your surface, and use a cookie cutter to form shapes.
Cover your baking tray with parchment paper.
Bake the cookies for 12 minutes at 350°F.
