Roasted Pumpkin Soup with Sweet Potato and Ginger
Ingredients
- pumpkin or squash
- sweet potato
- carrots
- ginger
- tiger nut milk
- coconut milk
- ume shiso seasoning
- pumpkin seed oil
- toasted seeds
- sourdough bread
Preparation
Oven roast the pumpkin or squash with its skin on.
Oven roast the sweet potato.
Steam the carrots and ginger.
Blend the roasted pumpkin, sweet potato, steamed carrots, and ginger together with tiger nut milk and coconut milk.
Optionally, make croutons from some of the pumpkin skin or sourdough bread.
Serve with a generous drizzle of ume shiso seasoning and pumpkin seed oil, and sprinkle toasted seeds or croutons.
