Pumpkin Soup

Ingredients

  • sweet potato
  • steamed carrots
  • ginger
  • nut milk
  • coconut milk
  • pumpkin seed

Preparation

  1. I oven roast my pumpkin or squash with its skin on (I love kuri or kabocha) and then blend it all (without the seeds) to make my soup. I sometimes take a bit of the skin to make croutons from

  2. My favourite way to make the soup is to include oven roasted sweet potato, steamed carrots and ginger and then blend it all with some tiger nut milk and coconut milk

  3. Additionally, I love it with a generous drizzle of @clearspringuk ume shiso seasoning and pumpkin seed oil and a sprinkle of toasted seeds or my lime and seeds croutons (made from @astonsbread sourdough)
