Simple Lentil Bolognese Weeknight Dinner

Ingredients

  • 1 onion
  • 1 pack mushrooms
  • 1 red pepper
  • 1 cup rinsed red lentils
  • 1 litre boiling water
  • 1 tin chopped tomatoes
  • 1 stock cube
  • some herbs
  • seasoning to taste
  • pasta or spaghetti
  • vegan cheese or nutritional yeast

Preparation

  1. Fry onion, mushrooms, and red pepper until soft.

  2. Add rinsed red lentils, 1 litre boiling water, chopped tomatoes, and stock cube.

  3. Add herbs and season to taste.

  4. Simmer for 30 minutes.

  5. Cook pasta or spaghetti.

  6. Combine all in a bowl.

  7. Top with vegan cheese or nutritional yeast.
