Simple Lentil Bolognese Weeknight Dinner
Ingredients
- 1 onion
- 1 pack mushrooms
- 1 red pepper
- 1 cup rinsed red lentils
- 1 litre boiling water
- 1 tin chopped tomatoes
- 1 stock cube
- some herbs
- seasoning to taste
- pasta or spaghetti
- vegan cheese or nutritional yeast
Preparation
Fry onion, mushrooms, and red pepper until soft.
Add rinsed red lentils, 1 litre boiling water, chopped tomatoes, and stock cube.
Add herbs and season to taste.
Simmer for 30 minutes.
Cook pasta or spaghetti.
Combine all in a bowl.
Top with vegan cheese or nutritional yeast.
