Vegan Almond Chocolate Cake

Ingredients

  • 290g almond flour
  • 80g almond butter (smooth)
  • 3 tsp vanilla extract
  • 45g sugar (i used coconut)
  • 1 tsp baking powder
  • 3 tbsp coconut oil, melted (i used unflavoured)
  • 1/2 cup almond milk
  • 1/2 cup mylk/dark choc chips (i used a mix)
  • 110g vegan butter (the spreadable kind)
  • 95g vegan chocolate
  • 1/4 cup almond milk

Preparation

  1. Preheat oven to fan 160°C

  2. Mix all the ingredients for the cake (besides the choc chips) until it comes together

  3. Fold in the chocolate chips

  4. Pour in a silicone square tin (or lined square) and bake for 35 minutes

  5. Mix up the frosting by melting the chocolate with the milk and then whisking it together with the vegan butter (it will be v runny)

  6. Place the frosting in a bowl in the fridge to set

  7. Remove the cake from the oven and cool before taking out of the tin and cooling completely on a wire rack

  8. Ice the cake, cut into slices and enjoy
