Gluten-Free Vegan Rainbow Mini Donuts

Ingredients

  • 1 1/4 cups almond milk
  • 3/4 cup sugar (substituted with 2/3 cup granulated sweetener)
  • 1/4 cup melted vegan butter
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt (optional)
  • 1 TBSP Madagascar vanilla
  • 2 cups gluten free all purpose flour
  • 3 tbsp colorful sprinkles

Glaze

  • 1/2 cup powdered sugar (substituted with powdered sweetener)
  • 1 tsp melted vegan butter
  • 1 tsp Madagascar vanilla
  • 1 tbsp almond milk
  • pinch of salt (optional)

Preparation

  1. Preheat oven to 350.

  2. Combine all donut ingredients in a large bowl and mix just until combined.

  3. Lightly oil a donut mold and transfer the batter into the mold.

  4. Bake for 10 minutes for mini donuts or 20 minutes for large donuts.

  5. Whisk glaze ingredients together, remove donuts from oven, drizzle with glaze, and top with extra sprinkles.
