Moist Gluten-Free Vegan Pineapple Cake

Ingredients

  • 60g vegan margarine
  • 1 tsp apple cider vinegar
  • 100g sugar or coconut blossom sugar
  • a pinch of salt
  • 350g gluten-free flour mix (e.g., store-bought or 150g potato starch, 100g rice flour, 100g teff flour)
  • ~200ml plant milk of choice
  • 1.5 tsp baking powder
  • 1/3 tsp baking soda
  • ~200g chopped pineapple and 6 rings for topping (from 1 fresh pineapple)

Preparation

  1. Preheat oven to 180°C

  2. Mix all ingredients and spread the dough in a baking form, such as 18x24 cm, oiled or prepared with baking paper.

  3. Top with the pineapple rings.

  4. Bake for about 30 minutes or until a toothpick comes out clean.
