Moist Gluten-Free Vegan Pineapple Cake
Ingredients
- 60g vegan margarine
- 1 tsp apple cider vinegar
- 100g sugar or coconut blossom sugar
- a pinch of salt
- 350g gluten-free flour mix (e.g., store-bought or 150g potato starch, 100g rice flour, 100g teff flour)
- ~200ml plant milk of choice
- 1.5 tsp baking powder
- 1/3 tsp baking soda
- ~200g chopped pineapple and 6 rings for topping (from 1 fresh pineapple)
Preparation
Preheat oven to 180°C
Mix all ingredients and spread the dough in a baking form, such as 18x24 cm, oiled or prepared with baking paper.
Top with the pineapple rings.
Bake for about 30 minutes or until a toothpick comes out clean.
