Vegan Orange Almond Loaf Cake
Ingredients
- 200g plain flour
- 50g ground almonds
- 1 tsp baking soda
- 2 tsp baking powder
- Pinch of salt
- 80ml rapeseed oil
- 150ml Califa almond milk
- 175g caster sugar
- Juice from two oranges
- Zest from one orange
- 1 tbsp vinegar
Preparation
Preheat the oven to 180C and grease and line a cake tin with baking paper.
In a bowl combine rapeseed oil, sugar, almond milk and mix to combine. Pour in fresh orange juice, vinegar then mix in orange zest.
In a separate bowl, sift in the plain flour, baking powder, bicarbonate of soda, ground almonds and a pinch of salt. Then, combine wet mixture with the dry gently until smooth.
Quickly spoon the cake mix into the prepared tin, spread level with the back of a spoon and bake on the middle shelf of the preheated oven for 40 minutes to 1 hour (different ovens vary). Cake is ready when a knife inserted in the centre comes out clean - not wet.
Leave the cake until completely cold before removing from the tin and serving.
