Vegan Carrot Cake
Ingredients
- 4 tsp baking powder
- pinch of salt
- 2 tsp cinnamon
- 1 tsp nutmeg
- 2 tbsp apple cider vinegar
- 2 tsp vanilla extract
- cream cheese frosting:
- 1/2 tsp vanilla extract
- pinch of salt
Preparation
Preheat the oven to 180c (350f) top and bottom heat
Lightly grease three 20cm (8
Put the flour, baking powder, salt, cinnamon, nutmeg and sugar in a large mixing bowl and mix
Put the grated carrots, applesauce, oil, vegetable milk, apple cider vinegar and the vanilla extract in a bowl and stir
Stir the carrot mixture slowly into the dry ingredients and fold in optionally chopped walnuts
Mix everything into a dough (do not stir too long)
Put the dough in the baking tins
Bake in the oven for 45-60 minutes until the dough is through
Then remove from the oven and let cool
Remove the cakes from the mold
Place a layer of cake on a platter and spread a layer of frosting on the cake
Place the next layer of cake on it and brush again with the frosting
Finally, put the last cake layer on top and brush again with the frosting
Then spread the frosting all around the sides of the cake using a spatula

Cream cheese frosting:
For the cream cheese frosting, put cream cheese and margarine in a mixing bowl and stir with a hand mixer for about 2 minutes
Add powdered sugar, vanilla extract and a pinch of salt and mix for another 2 minutes until a creamy consistency is obtained
