Cranberry and Cinnamon Bread

Ingredients

  • 2 cups wholemeal bread flour
  • 2 large eggs
  • 1 tbsp apple cider vinegar
  • 1 tsp baking powder
  • 1/2 cup maple syrup
  • 1/4 cup almond milk
  • 1 tbsp cinnamon
  • 1 tsp vanilla extract
  • A generous handful of dried cranberries

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a 1lb loaf tin with baking paper or use a silicon one.

  2. In a bowl, whisk the eggs and add the maple syrup, almond milk, vanilla and apple cider vinegar. Mix well then add the baking powder and slowly fold in the flour, adding half a cup at a time.

  3. Stir in the cinnamon and cranberries.

  4. Pour into the prepared tin and bake for 30 minutes until golden brown on top.

  5. Allow to cool, slice up and enjoy.
