Cranberry and Cinnamon Bread
Ingredients
- 2 cups wholemeal bread flour
- 2 large eggs
- 1 tbsp apple cider vinegar
- 1 tsp baking powder
- 1/2 cup maple syrup
- 1/4 cup almond milk
- 1 tbsp cinnamon
- 1 tsp vanilla extract
- A generous handful of dried cranberries
Preparation
Preheat the oven to 180 degrees Celsius and line a 1lb loaf tin with baking paper or use a silicon one.
In a bowl, whisk the eggs and add the maple syrup, almond milk, vanilla and apple cider vinegar. Mix well then add the baking powder and slowly fold in the flour, adding half a cup at a time.
Stir in the cinnamon and cranberries.
Pour into the prepared tin and bake for 30 minutes until golden brown on top.
Allow to cool, slice up and enjoy.
