Sweet and Moist Gluten-Free Zucchini Banana Bread

Ingredients

  • 1 1/2 c @natureseats almond flour
  • 1 1/2 c oat flour
  • 2 eggs
  • 1/2 c coconut oil, melted
  • 1/4 c maple syrup
  • 1/4 c coconut sugar
  • 2 bananas
  • 2 c grated zucchini
  • 2 tsp vanilla extract
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt

Preparation

  1. If bananas are not super ripe, bake them in the oven at 350°F for 20 minutes or until blackish.

  2. Grate the zucchini and squeeze out excess water.

  3. Bake the mixture at 350°F for 50-55 minutes and cover with foil halfway through.
