Sweet and Moist Gluten-Free Zucchini Banana Bread
Ingredients
- 1 1/2 c @natureseats almond flour
- 1 1/2 c oat flour
- 2 eggs
- 1/2 c coconut oil, melted
- 1/4 c maple syrup
- 1/4 c coconut sugar
- 2 bananas
- 2 c grated zucchini
- 2 tsp vanilla extract
- 1 tbsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
Preparation
If bananas are not super ripe, bake them in the oven at 350°F for 20 minutes or until blackish.
Grate the zucchini and squeeze out excess water.
Bake the mixture at 350°F for 50-55 minutes and cover with foil halfway through.
