Paleo and Gluten Free Pumpkin Bread

Ingredients

  • 3 eggs
  • 1 15 ounce can pumpkin purée
  • 1 cup almond flour
  • 1/3 cup + 1 tbsp coconut flour
  • 2 tbsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 3 tbsp nut butter
  • 1/3 cup + 2 tbsp coconut sugar
  • 1/4 cup + 1 tbsp maple syrup

Preparation

  1. Whisk the eggs then add everything else into a bowl and mix well

  2. Add to a loaf pan lined with parchment paper

  3. Bake at 350f for 65-70 mins
