Paleo Gluten-Free Cinnamon Waffle with Icing
Ingredients
- 2 eggs
- 1/4 cup coconut flour
- 1 tbsp coconut sugar
- 4 tbsp almond milk
- 1 tbsp applesauce
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp vanilla
Optional
- 1 tbsp vanilla protein or collagen
Icing
- 1 tbsp powdered sugar
- 1 tsp almond milk
- 1 tbsp coconut butter
- 1/2 tbsp maple syrup
Preparation
In a bowl, whisk the eggs.
Add the remaining ingredients and mix together.
For the icing, mix 1 tbsp powdered sugar with 1 tsp almond milk for regular icing, or melt 1 tbsp coconut butter and mix with 1/2 tbsp maple syrup for paleo icing.
Grease your waffle iron.
Cook the batter according to your waffle iron instructions.
Remove the waffle and top with a sprinkle of cinnamon, coconut sugar, and the icing.
