Paleo Gluten-Free Cinnamon Waffle with Icing

Ingredients

  • 2 eggs
  • 1/4 cup coconut flour
  • 1 tbsp coconut sugar
  • 4 tbsp almond milk
  • 1 tbsp applesauce
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla

Optional

  • 1 tbsp vanilla protein or collagen

Icing

  • 1 tbsp powdered sugar
  • 1 tsp almond milk
  • 1 tbsp coconut butter
  • 1/2 tbsp maple syrup

Preparation

  1. In a bowl, whisk the eggs.

  2. Add the remaining ingredients and mix together.

  3. For the icing, mix 1 tbsp powdered sugar with 1 tsp almond milk for regular icing, or melt 1 tbsp coconut butter and mix with 1/2 tbsp maple syrup for paleo icing.

  4. Grease your waffle iron.

  5. Cook the batter according to your waffle iron instructions.

  6. Remove the waffle and top with a sprinkle of cinnamon, coconut sugar, and the icing.
