Cinnamon Roll Loaf - Gluten Free + Paleo
Ingredients
- 4 eggs
- 2 cups almond flour
- 1/3 cup maple syrup
- 1 tsp vanilla
- 3 tsp cinnamon
- 2 tbsp applesauce (can sub butter or ghee here)
- 2 tsp baking powder
- 2 tbsp nut butter
Cinnamon sugar layer
- 1/2 cup coconut sugar
- 2 tbsp melted ghee
- 2 tsp cinnamon
Preparation
In a bowl, whisk the eggs, then add the rest of the bread ingredients and mix together well.
Line a loaf pan with parchment paper and add 1/2 of the batter.
In a small bowl, mix the cinnamon sugar layer ingredients together.
Add 1/2 of the cinnamon sugar mixture to the batter in the loaf pan.
Then add the rest of the batter on top.
Drizzle the remaining cinnamon sugar mixture on top.
Bake at 350°F for 39-41 minutes.
Let cool completely, then drizzle melted coconut butter or powdered sugar mixed with milk on top.
Slice and enjoy!
