Apple Streusel Muffins - Paleo and Gluten-Free

Ingredients

  • 3 eggs
  • 3/4 cup almond flour
  • 1/4 cup + 1 tbsp coconut flour
  • 1/2 cup maple syrup
  • 1/4 cup applesauce
  • 1/4 cup peanut butter* (substitute any nut butter)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 green apple, diced

Streusel topping

  • 1/4 cup coconut sugar
  • 1/4 cup almond flour
  • 1/4 cup pecans
  • 1 tsp cinnamon
  • Sprinkle of salt
  • 3 tbsp applesauce

Preparation

  1. In a large mixing bowl, whisk the eggs.

  2. Add the remaining ingredients except the apples to the bowl and mix well.

  3. Fold in the diced apples.

For the loaf

  1. Line a loaf pan with parchment paper and pour the batter into it.

  2. In a food processor, pulse together all the ingredients for the streusel topping.

  3. Spread the topping over the loaf.

  4. Bake at 350°F for 38-42 minutes.

For the muffins

  1. Fill each muffin cup about 2/3 of the way with batter.

  2. Add the streusel topping on the remaining space.

  3. Makes 9 muffins.

  4. Bake for 25 minutes.

  1. Let the muffins or loaf cool completely, then enjoy!
