Apple Streusel Muffins - Paleo and Gluten-Free
Ingredients
- 3 eggs
- 3/4 cup almond flour
- 1/4 cup + 1 tbsp coconut flour
- 1/2 cup maple syrup
- 1/4 cup applesauce
- 1/4 cup peanut butter* (substitute any nut butter)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/2 green apple, diced
Streusel topping
- 1/4 cup coconut sugar
- 1/4 cup almond flour
- 1/4 cup pecans
- 1 tsp cinnamon
- Sprinkle of salt
- 3 tbsp applesauce
Preparation
In a large mixing bowl, whisk the eggs.
Add the remaining ingredients except the apples to the bowl and mix well.
Fold in the diced apples.
For the loaf
Line a loaf pan with parchment paper and pour the batter into it.
In a food processor, pulse together all the ingredients for the streusel topping.
Spread the topping over the loaf.
Bake at 350°F for 38-42 minutes.
For the muffins
Fill each muffin cup about 2/3 of the way with batter.
Add the streusel topping on the remaining space.
Makes 9 muffins.
Bake for 25 minutes.
Let the muffins or loaf cool completely, then enjoy!
