Gluten-Free Peanut Butter Chocolate Muffins

Ingredients

  • 3 eggs
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup melted ghee or butter
  • 1/4 cup Peanut butter
  • 1/4 cup chocolate chips
  • 1 tsp baking powder

Preparation

  1. Preheat the oven to 350°F (175°C).

Mix Wet Ingredients

  1. In a mixing bowl, whisk the eggs.

  2. Add in melted ghee or butter, peanut butter, and maple syrup.

Combine Dry Ingredients

  1. To the wet mixture, add almond flour, coconut flour, cocoa powder, and baking powder.

  2. Mix everything together until well combined.

Fold in Chocolate Chips

  1. Gently fold in the chocolate chips into the batter.

Prepare Muffin Tin

  1. Line a muffin tin with muffin liners.

Fill the Muffin Liners

  1. Spoon the batter into the muffin liners, filling them about 3/4 of the way.

  2. This recipe makes approximately 7 muffins.

Bake

  1. Place the muffin tin in the preheated oven.

  2. Bake for 27-28 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Add Toppings and Enjoy

  1. Remove the muffins from the oven.

  2. While they are still warm, top them with more chocolate chips and a drizzle of peanut butter.

  3. Allow the muffins to cool completely before enjoying.
