Festive Peppermint Chocolate Donuts

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 3 tbsp maple syrup
  • 1/2 tsp peppermint extract
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/4 cup chocolate chips
  • 1 tsp coconut oil
  • Crushed candy canes (optional)

Preparation

  1. Preheat the oven to 325°F (163°C).

  2. In a bowl, whisk the eggs, then add in almond flour, unsweetened cocoa powder, maple syrup, peppermint extract, vanilla, and baking powder.

  3. Mix all the ingredients together until well combined.

  4. Grease a donut pan (a silicone one is recommended for easy removal).

  5. Fill each donut well with batter, filling them about 3/4 of the way up. This recipe makes 6-7 donuts.

  6. Bake the donuts in the preheated oven for 12 minutes.

  7. Allow the donuts to cool, then carefully remove them from the pan.

  8. For the chocolate topping, melt the chocolate chips with coconut oil.

  9. Dip the top of each donut into the melted chocolate mixture.

  10. Optionally, sprinkle crushed candy canes on top of the chocolate-coated donuts.

  11. If desired, place the donuts in the fridge to allow the chocolate topping to harden.
