Carrot Cake Donuts
Ingredients
- 2 eggs
- 1 cup almond flour
- 3 tbsp maple syrup (or honey)
- 1 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp nutmeg
- 1 tsp vanilla
- 1 tsp baking powder
- 1/2 cup shredded carrots
- 1/4 cup chopped pecans (optional)
For Icing (Paleo option)
- 1/4 cup coconut butter, melted
- 2 tbsp maple syrup
For Icing (Other option)
- 1/2 cup powdered sugar
- 2 tsp almond milk
Preparation
Preheat oven to 350°F (175°C).
Whisk 2 eggs in a bowl.
Add almond flour, maple syrup (or honey), cinnamon, ginger, nutmeg, vanilla, baking powder, shredded carrots, and chopped pecans (if using). Mix everything together well.
Grease a donut pan and fill each cavity about 3/4 of the way with the batter.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into a donut comes out clean.
While the donuts are baking, prepare the icing. For the paleo option, melt coconut butter and mix it with maple syrup. For the other option, mix powdered sugar and almond milk together.
Once the donuts are done, remove them from the oven and let them cool.
Once the donuts are completely cooled, add the icing on top.
