Funfetti Donuts with Collagen and Sprinkles

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 1 tbsp @ancientnutrition vanilla collagen
  • 3 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tbsp sprinkles

Icing

  • 1/4 cup coconut butter
  • 1/4 cup maple syrup
  • almond milk (optional)

Preparation

  1. Preheat oven to 350F.

  2. Whisk 2 eggs, then add in the ingredients.

  3. Mix everything together and add 1 tbsp of sprinkles.

  4. Add batter to a greased donut pan, filling about 3/4 of the way.

  5. Bake for approximately 12 minutes.

  6. For the icing: Melt 1/4 cup coconut butter and 1/4 cup maple syrup for 15 seconds. Add a little almond milk if needed to thin it out.

  7. Prepare the icing right after putting the donuts in the oven so it has time to harden while the donuts bake.

  8. Let the donuts cool (you can put them in the fridge to speed up the process), then dip them in the icing.

  9. Add some sprinkles if desired, then eat immediately or let the icing harden.

  10. This recipe makes 7-8 donuts.
