Paleo and Gluten-Free Pumpkin Donuts

Ingredients

Donuts

  • 2 eggs
  • 1 cup almond flour
  • 1/4 cup organic pumpkin
  • 3 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice

Icing

  • 1/2 tbsp coconut butter
  • 1/2 tbsp maple syrup

Cream cheese frosting

  • 1/2 cup cream cheese
  • 1 tbsp maple syrup
  • cinnamon

Preparation

  1. Preheat oven to 350F

  2. Mix together 2 eggs (whisked), 1 cup almond flour, 1/4 cup organic pumpkin, 3 tbsp maple syrup, 1 tsp baking powder, 1 tsp vanilla, 1 tsp cinnamon, and 1/2 tsp pumpkin pie spice

  3. Pour the mixture into a greased donut pan

  4. Bake for 20-22 minutes

  5. Let the donuts cool before removing them from the pan

Icing

  1. While the donuts are baking, mix 1/2 tbsp coconut butter and 1/2 tbsp maple syrup

  2. Microwave the mixture for 30 seconds and stir

  3. Let it sit and add a little milk of choice to thin it out if needed

  4. Once the donuts have cooled slightly, dip them into the icing

  5. You can eat them immediately or store in the fridge to let the icing harden

Frosting

  1. Mix together 1/2 cup cream cheese, 1 tbsp maple syrup, and cinnamon to make the cream cheese frosting
