Pumpkin Waffles - Paleo & Gluten-Free

Ingredients

  • 3 eggs
  • 1/2 cup pumpkin purée
  • 1 1/2 cups almond flour
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 2 tbsp coconut sugar
  • 1/4 cup unsweetened applesauce
  • Optional: 1-2 tbsp vanilla collagen or protein

Preparation

  1. Mix all the ingredients together in a bowl.

  2. Heat your waffle iron and grease it with nonstick spray.

  3. Add the batter to the waffle iron and cook according to the timer.

  4. Once cooked, remove the waffles from the iron.
