Paleo Gluten-Free Cinnamon Sugar Pancakes

Ingredients

  • 3 eggs
  • 1 banana
  • 1 1/2 cups almond flour
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 teaspoons coconut sugar
  • 1 1/2 teaspoons baking powder
  • Oil or butter for cooking
  • Coconut sugar for sprinkling

Preparation

  1. Heat a skillet over medium-low heat.

  2. In a bowl, whisk 3 eggs.

  3. Mash 1 banana.

  4. Add almond flour, cinnamon, vanilla, coconut sugar, and baking powder to the bowl and mix everything together.

  5. Add a little oil or butter to the skillet.

  6. Make mini pancakes in the skillet.

  7. Cook for about 2 minutes, then sprinkle about 1/4 teaspoon coconut sugar on top.

  8. Flip the pancakes and cook for 1-2 more minutes.

  9. The recipe makes about 8 mini pancakes.

Tips

  1. Top with coconut butter and pure maple syrup for serving.
