Paleo Gluten-Free Cinnamon Sugar Pancakes
Ingredients
- 3 eggs
- 1 banana
- 1 1/2 cups almond flour
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 teaspoons coconut sugar
- 1 1/2 teaspoons baking powder
- Oil or butter for cooking
- Coconut sugar for sprinkling
Preparation
Heat a skillet over medium-low heat.
In a bowl, whisk 3 eggs.
Mash 1 banana.
Add almond flour, cinnamon, vanilla, coconut sugar, and baking powder to the bowl and mix everything together.
Add a little oil or butter to the skillet.
Make mini pancakes in the skillet.
Cook for about 2 minutes, then sprinkle about 1/4 teaspoon coconut sugar on top.
Flip the pancakes and cook for 1-2 more minutes.
The recipe makes about 8 mini pancakes.
Tips
Top with coconut butter and pure maple syrup for serving.
