Cinnamon Sugar Pancakes

Ingredients

  • 3 eggs
  • 1 banana
  • 1 1/2 cups almond flour
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 2 tsp coconut sugar
  • 1 1/2 tsp baking powder
  • Oil or butter (for cooking)
  • Coconut sugar (for sprinkling)
  • Toppings: coconut butter and pure maple syrup

Preparation

  1. Heat a skillet over low-medium heat.

  2. In a bowl, whisk 3 eggs.

  3. Mash 1 banana and add it to the eggs.

  4. Incorporate 1 1/2 cups almond flour into the mixture.

  5. Add 1 tsp cinnamon and 1 tsp vanilla.

  6. Stir in 2 tsp coconut sugar and 1 1/2 tsp baking powder.

  7. Mix all the ingredients together until well combined.

  8. Heat a little oil or butter in a skillet.

  9. Pour small portions of the batter onto the skillet to make mini pancakes.

  10. Cook for about 2 minutes on one side.

  11. Sprinkle about 1/4 tsp coconut sugar on top of each pancake.

  12. Flip the pancakes and cook for an additional 1-2 minutes.

  13. Repeat the process until you've made 8 mini pancakes.

  14. Serve the pancakes topped with coconut butter and pure maple syrup.
