Cinnamon Sugar Pancakes
Ingredients
- 3 eggs
- 1 banana
- 1 1/2 cups almond flour
- 1 tsp cinnamon
- 1 tsp vanilla
- 2 tsp coconut sugar
- 1 1/2 tsp baking powder
- Oil or butter (for cooking)
- Coconut sugar (for sprinkling)
- Toppings: coconut butter and pure maple syrup
Preparation
Heat a skillet over low-medium heat.
In a bowl, whisk 3 eggs.
Mash 1 banana and add it to the eggs.
Incorporate 1 1/2 cups almond flour into the mixture.
Add 1 tsp cinnamon and 1 tsp vanilla.
Stir in 2 tsp coconut sugar and 1 1/2 tsp baking powder.
Mix all the ingredients together until well combined.
Heat a little oil or butter in a skillet.
Pour small portions of the batter onto the skillet to make mini pancakes.
Cook for about 2 minutes on one side.
Sprinkle about 1/4 tsp coconut sugar on top of each pancake.
Flip the pancakes and cook for an additional 1-2 minutes.
Repeat the process until you've made 8 mini pancakes.
Serve the pancakes topped with coconut butter and pure maple syrup.
