Gluten-Free Paleo Cinnamon Sugar Donuts

Ingredients

  • 2 eggs
  • 1 cup almond flour
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 tablespoon coconut sugar
  • 1 tablespoon nut butter
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder

Coating

  • Melted coconut oil (as needed)
  • 2 tablespoons coconut sugar
  • 2 teaspoons cinnamon

Preparation

  1. Preheat the oven to 350°F.

  2. In a bowl, whisk 2 eggs.

  3. Add 1 cup almond flour, 2 tablespoons maple syrup, 1/2 teaspoon vanilla extract, 1/2 tablespoon coconut sugar, 1 tablespoon nut butter, 1 teaspoon cinnamon, and 1 teaspoon baking powder to the eggs and mix well.

  4. Grease a donut pan, preferably a silicone one.

  5. Pour the batter into the donut molds, filling them about three-quarters full.

  6. Bake for 14 to 15 minutes.

  7. Remove from the oven and let cool for a few minutes.

  8. Pop the donuts out of the molds.

  9. Brush the donuts with melted coconut oil.

  10. In a small bowl, mix 2 tablespoons coconut sugar and 2 teaspoons cinnamon.

  11. Dip the donuts in the cinnamon-sugar mixture.

  12. Serve immediately or refrigerate for later enjoyment.

Tips

  1. Use a silicone donut pan for easier removal.

  2. Donuts can be stored in the refrigerator if not consumed immediately.
