Gluten-Free Paleo Cinnamon Sugar Donuts
Ingredients
- 2 eggs
- 1 cup almond flour
- 2 tablespoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon coconut sugar
- 1 tablespoon nut butter
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
Coating
- Melted coconut oil (as needed)
- 2 tablespoons coconut sugar
- 2 teaspoons cinnamon
Preparation
Preheat the oven to 350°F.
In a bowl, whisk 2 eggs.
Add 1 cup almond flour, 2 tablespoons maple syrup, 1/2 teaspoon vanilla extract, 1/2 tablespoon coconut sugar, 1 tablespoon nut butter, 1 teaspoon cinnamon, and 1 teaspoon baking powder to the eggs and mix well.
Grease a donut pan, preferably a silicone one.
Pour the batter into the donut molds, filling them about three-quarters full.
Bake for 14 to 15 minutes.
Remove from the oven and let cool for a few minutes.
Pop the donuts out of the molds.
Brush the donuts with melted coconut oil.
In a small bowl, mix 2 tablespoons coconut sugar and 2 teaspoons cinnamon.
Dip the donuts in the cinnamon-sugar mixture.
Serve immediately or refrigerate for later enjoyment.
Tips
Use a silicone donut pan for easier removal.
Donuts can be stored in the refrigerator if not consumed immediately.
