Zucchini Banana Bread Waffles
Ingredients
- 2 eggs
- 2 ripe bananas
- 1/4 cup + 1 tbsp coconut flour
- 1/4 cup shredded zucchini (pat dry and get as much water out as you can)
- 3 tbsp nut butter
- 1.5 tbsp maple syrup
- 1.5 tbsp melted ghee or butter
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp vanilla
Preparation
Whisk the eggs then add in the rest of the ingredients.
Mix together well.
Grease a mini waffle iron and add the batter in.
If it gets big at first, press the waffle iron down once or twice to flatten it out.
Cook for 4-5 minutes in a mini waffle iron.
Top with maple syrup and butter.
Notes
This recipe makes 6 mini waffles and has not been tested in a regular waffle iron.
