Zucchini Banana Bread Waffles

Ingredients

  • 2 eggs
  • 2 ripe bananas
  • 1/4 cup + 1 tbsp coconut flour
  • 1/4 cup shredded zucchini (pat dry and get as much water out as you can)
  • 3 tbsp nut butter
  • 1.5 tbsp maple syrup
  • 1.5 tbsp melted ghee or butter
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp vanilla

Preparation

  1. Whisk the eggs then add in the rest of the ingredients.

  2. Mix together well.

  3. Grease a mini waffle iron and add the batter in.

  4. If it gets big at first, press the waffle iron down once or twice to flatten it out.

  5. Cook for 4-5 minutes in a mini waffle iron.

  6. Top with maple syrup and butter.

Notes

  1. This recipe makes 6 mini waffles and has not been tested in a regular waffle iron.
