Gluten-Free Paleo Lemon Blueberry Muffins
Ingredients
- 2 eggs
- 1/2 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp baking powder
- 1/4 cup maple syrup
- 1 1/2 tsp lemon extract or 3 tsp lemon zest
- 1 tbsp softened ghee
- 1/4 cup blueberries
Preparation
Preheat oven to 350F.
In a bowl, whisk 2 eggs.
Add in 1/2 cup almond flour, 2 tbsp coconut flour, 1/2 tsp baking powder, 1/4 cup maple syrup, 1 1/2 tsp lemon extract or 3 tsp lemon zest, and 1 tbsp softened ghee.
Mix it all together.
Add in 1/4 cup blueberries and mix in with a spatula.
Line a muffin tin with baking cups.
Bake for 20 minutes.
Tips
This recipe makes 6 muffins; double it if you want a regular sized batch.
