Gluten-Free Paleo Lemon Blueberry Muffins

Ingredients

  • 2 eggs
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1/4 cup maple syrup
  • 1 1/2 tsp lemon extract or 3 tsp lemon zest
  • 1 tbsp softened ghee
  • 1/4 cup blueberries

Preparation

  1. Preheat oven to 350F.

  2. In a bowl, whisk 2 eggs.

  3. Add in 1/2 cup almond flour, 2 tbsp coconut flour, 1/2 tsp baking powder, 1/4 cup maple syrup, 1 1/2 tsp lemon extract or 3 tsp lemon zest, and 1 tbsp softened ghee.

  4. Mix it all together.

  5. Add in 1/4 cup blueberries and mix in with a spatula.

  6. Line a muffin tin with baking cups.

  7. Bake for 20 minutes.

Tips

  1. This recipe makes 6 muffins; double it if you want a regular sized batch.
