Spooky Sweet Potato Muffins

Ingredients

  • 1 egg (whisked)
  • 1/2 cup mashed, cooked, peeled sweet potato
  • 1/2 cup almond flour
  • 1 tbsp coconut flour
  • 2 tbsp maple syrup
  • 1 tbsp melted ghee or butter
  • 1 tsp cinnamon
  • 1 tsp baking powder

Preparation

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix together the whisked egg, mashed sweet potato, almond flour, coconut flour, maple syrup, melted ghee or butter, cinnamon, and baking powder. Use a hand mixer to ensure thorough mixing.

  3. Grease a muffin tin, preferably one with a cute Halloween design.

  4. Fill each muffin cup with the batter, about 3/4 of the way up.

  5. Place the muffin tin in the preheated oven and bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  6. Once baked, remove the muffins from the oven and allow them to cool before enjoying.
