Spooky Sweet Potato Muffins
Ingredients
- 1 egg (whisked)
- 1/2 cup mashed, cooked, peeled sweet potato
- 1/2 cup almond flour
- 1 tbsp coconut flour
- 2 tbsp maple syrup
- 1 tbsp melted ghee or butter
- 1 tsp cinnamon
- 1 tsp baking powder
Preparation
Preheat the oven to 350°F (175°C).
In a bowl, mix together the whisked egg, mashed sweet potato, almond flour, coconut flour, maple syrup, melted ghee or butter, cinnamon, and baking powder. Use a hand mixer to ensure thorough mixing.
Grease a muffin tin, preferably one with a cute Halloween design.
Fill each muffin cup with the batter, about 3/4 of the way up.
Place the muffin tin in the preheated oven and bake for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Once baked, remove the muffins from the oven and allow them to cool before enjoying.
